Roasted Potato and Beet Salad with Basil-Garlic Oil
2 C beets, cubed Basil Oil:
2 C potatoes, cubed ½ C Olive Oil
¼ C olive oil 1 C Basil Leaves
1 ½ t sea salt 3 Cloves Garlic, crushed
1 t black pepper Sea Salt and Black Pepper

Souse
3 pounds of pig feet-wash thoroughly
Place pig feet in lemon juice, salt, water and cover
Let marinate for 2 hours
Remove from marinate and wash thoroughly
Cover pigs feet in water, add salt, bring to a boil
Place pigs feet in oven dish, cover with water

Pernil de Cerdo, Roasted Pork Leg
8 lb Pork Leg
6 crushed garlic cloves
2 teaspoons dried oregano
2 tablespoons salt
1/2 tablespoon peppercorns
2 tablespoons cider vinegar
2 tablespoons cooking oil
2 chopped onions
Mix the ingredients together and rub on the pork leg

Pretzel Bark
1 cup chopped pretzels
1/3 cup chopped toasted pecans
11/2 pkg. (8 squares each) Bakers Semi-Sweet Chocolate, melted
Stir pretzels and nuts into chocolate; spread onto waxed paper-covered baking sheet.
Refrigerate 1 hour or until firm. Break into pieces.
